Thread noodles are definitely one of the foods that best represent Fuzhou. The reason why thread noodles are regarded by Fuzhou people as an important food that must be eaten during the New Year festivals has 3 main points: it is tasty, it means good luck, and it has therapeutic effects.
The thin noodles dance in the soup like an elegant waltz. When you take a bite, the noodles are so soft and tough that it’s like a work of art on your tongue!

Putian Braised Noodles – 莆田卤面

The soup of Putian Braised Noodles can be said to condense the freshness of the entire East China Sea. That mouthful of sucking noodles with mushrooms and dried shrimps, every bite is an adventure for the tastebuds. I bet once you’ve had it, you’ll fall in love with the flavour!
Zhangzhou Dry Noodles – 漳州干拌面
The seemingly ordinary dry noodles hide the wisdom of Zhangzhou people. The spicy and savoury sauce, with a variety of fresh ingredients, tastes rich in layers and aftertaste. Every time I eat it, I can’t help but lick my lips for fear of missing any hint of flavour.
Shaxian Mixed Noodle – 沙县拌面

Gutian Box Noodles – 古田盒面
When I first heard about Gutian box noodles, I thought they were noodles in a box! It turned out to be noodles in a box because they used to be sold along the streets on a stretcher and packed in a food box. The unique aroma of the noodles seems to awaken the sleeping taste buds. Every time you eat it, you feel like you are tasting a piece of history!
Lianjiang fish noodles – 连江鱼面
It is a local speciality, which is made of fresh fish meat from the sea, cut off the head and tail, pick out the bones and skin, chopped and minced, processed with mushroom powder, mixed with water, kneaded, crushed, pounded, cut, etc., and then pan-fried and roasted over a slight fire.
Yongchun Braised Noodles – 永春卤面
The lo mein (Braised Noodles), which is a symbol of people’s simple feelings and wishes, is a prayer for the happiness and longevity of the whole family, as well as the joy of a reunion or a wedding celebration. This flavour of happiness has become the best taste of southern Fujian.

Xiayang Chopstick Noodles – 峡阳筷子面
